The recipe for this meat floss hand-pulled bread is from the kitchen Milk Girl,: High Flour 220g , 30g low flour, 80g water, 50g milk, 25g egg, 30g sugar, 3g salt, 3g quick yeast, 25g butter (add later), 13g milk powder

The step is to add the other ingredients except butter to the bread machine (or use a kitchen machine, anyway, you need to knead the dough), knead it into dough, add butter, and knead it smooth dough.

Here I can use the little trick I learned: take a scissors to cut the dough when the bread machine is kneading the dough, and then cut it again after kneading a few times, repeating this many times Cut the bread until the glove film can be pulled out, and you can help the dough to come out of the film without kneading with your hands! Then put it in a warm place to ferment for about an hour, until it doubles in size. You can dab some starch with your hand and poke a hole, and it will be fine if it does not shrink.



Then roll out the dough and flatten it. You don't need to care about the shape. Anyway, you won't be able to see the shape of Chebachiba after that. The most important thing in cooking is to be happy.




Then take a knife and cut it into small pieces. I cut the dough into two pieces because the board is relatively small. In fact, I cut about 20 pieces in total.


Take a cake pan, about eight inches, and lay a layer of dough on the bottom first, you don't need to squeeze too much, because it will be filled after fermentation. Then squeeze some mayonnaise, and then spread a layer of meat floss, so Three times.

Then put it in a warm place for secondary fermentation, about 45 minutes, and when it's almost doubled in size, it's ready to bake!


Preheat oven Bake at 180 degrees for about 40 minutes. Bake for about ten minutes and cover with tin foil to prevent the top from burning.

Because there is mayonnaise on the edge, it can be easily torn off, and the edge of the bread is oily and fragrant is the essence.

It's really soft and elastic. I usually eat it as a snack when I don't have anything to do. I can eat half of it at once~

You can bake it with a waffle maker the next day if you can't finish it, and it will turn into a floss waffle that is crispy on the outside and soft on the inside! It's better than bread when it's hot!

【炸鸡厨房】我的面包分你一半:不用手揉也能做出松软的肉松手撕面包

本命可能真的是肉松,超爱吃肉松的一切!平时没事也会抱着罐子空口吃肉松,所以我平时不太敢买哈哈因为一不小心就吃多。



平时也是想尽办法到处找肉松的食谱,做过软欧,肉松酥,肉松蛋糕,反正看到肉松的菜我就完全不淡定了

这款肉松手撕面包的配方是用的下厨房 牛奶少女、的:高粉 220克 ,低粉 30克 ,水 80克 ,牛奶 50克 ,蛋液 25克 ,糖 30克 ,盐 3克 ,快速酵母 3克 ,黄油 25克(后加) ,奶粉 13克

另外准备肉松和沙拉酱当馅料哦~


步骤就是把除了黄油的其它材料都加到面包机里(或者用厨师机也行,反正要揉面),揉好变成面团之后再加黄油,揉成光滑的面团。

这里就可以用上我学到的小诀窍:就是面包机揉面的时候拿一个剪刀把面团剪开,等揉几下之后再剪一下,这样反复多次剪到面包可以拉出手套膜,就可以不用手揉还能帮助面团出膜啦!(厨师机的话不太合适,容易划伤部件)


然后放到温暖的地方发酵一个小时左右,涨到两倍大。可以拿手沾点淀粉戳一个洞,不回缩就好啦。



然后把面团排气之后擀平,形状不需要在意,反正之后切巴切巴你也看不出来啥形状了, 做菜最重要的就是开心。




然后拿刀划成小块,我是因为板子比较小所以就分成两个面团切的,其实一共切了20块左右。


拿一个蛋糕盘,八寸左右差不多,在底部先铺一层面团,不需要太挤,因为之后发酵都会填满的。然后挤上一些蛋黄酱,再铺一层肉松,这样 重复三次

觉得这里的肉松和蛋黄酱 千万不要吝啬,撒多多才会比较好吃哦!(我这里用的是海苔素肉松,其实加普通肉松更好吃)

然后放到温暖的地方进行二次发酵,大约45分钟左右,看它差不多两倍大了就可以拿去烤了!


烤箱预热 180度烤约40分钟。烤十分钟左右可以盖上锡纸防止顶部烤焦~。

因为边缘都有蛋黄酱所以很容易就能撕下来,面包的边缘油滋滋,香喷喷的才是精华

真的很软很有弹性,平时没事揪着当零食吃,一下就啃完半个~

吃不完的第二天可以用华夫饼机来烤一下,变成外酥里软的肉松华夫饼了!趁热吃比面包还好吃!

这个华夫可以加蜂蜜或者可以再加一点蛋黄酱哈哈哈(土方迷妹在此)
