Shrimp Dumplings Like Dumplings but Not Dumplings

似饺非饺之虾饺

一直想自己做虾饺吃,今天终于弄了一盘有着虾饺的内在却不是虾饺的外表的虾饺(相对于酒楼的标准来说)😂


全虾去壳去虾头,在虾背上划一刀取出虾肠(虾肠里是什么大家都知道了吧?),然后用胡椒粉和料酒放冰箱腌制一小时 

把虾切粒再剁成碎 

虾茸里加入少许姜蓉、(浸泡数小时的)冬菇粒、蚝油、菜油、麻油、白糖,搅拌均匀(喜欢干笋的可以加干笋)


2.5 cup虾饺粉,加入煮沸的热水(一定要用锅煮沸,不要用电热水壶),一边加水一边用筷子顺时针搅拌,然后加入菜油,搓成面团 

面团搓成长条状,切成相同份量的小面团


小面团搓圆后,放入Tortilla presse(一个用来做Tortilla的器具,但是压饺子皮的效果同样的好,极力推荐亚米上架这个!让更多的懒人受益) 

然后按下去 

然后饺子皮就出来啦 

取一部分虾茸一只全虾,包起来 

包好后,蒸15分钟(蒸至饺子皮透明就可以了)

请忽略卖相😓真的怎么都学不会这种包法....但是味道可以的!


最后!亚米真的可以考虑上架这个,真心的好用!懒人擀皮首选!之前在Walmart买过这类的,但是远不及这个压的皮薄。
