yami_featured_image # instant pot # # 关于美食 # # 牛肉 ## 燃烧卡路里大作战 # Pot roast版本有很多,虽然每家做法都不一样,但是基础配方还是牛肉,胡萝卜,土豆和芹菜。我最喜欢也常做的是这种香草和香料比较多的。主要起提味作用的是欧芹,百里香,迷迭香,牛至和红酒。 看似用料很多,但实际操作非常简单,不需要任何烹饪技巧。这样一锅可以够很多人食用,适合家里人多或者一次想做很多留着慢慢吃的。即便是再次加热也很好吃。 在选择牛肉上,美式炖肉适合肥瘦相间,筋膜较少的部分。比如肩胛肉(Chuck),前胸肉(Brisket) 和臀肉(Round)都可以。 <食材> 2-3磅 牛肉 beef 牛肉调料: 1/2 Tbsp 盐 / salt 1/2 Tbsp 调味盐 / seasoning salt 1 tsp. 普罗旺斯香草 (可不放)/ herbes de provence 2 tsp. 黑胡椒 / black pepper 1/2 Tbsp. 干欧芹 / dried parsley 1 tsp. 干百里香 / dried thyme 1 tsp 干迷迭香 /dried rosemary 1 tso 干牛至 / oregano 1 tsp. 洋葱粉 / onion powder 1 tsp. 蒜粉 / garlic powder 牛肉汤: 3 Tbsp. 无盐黄油 / unsalted butter 3个甜洋葱,切厚片 / sweet onions 3颗蒜碾碎 / minced garlic 2 cups 牛肉高汤 / beef broth 1 cup 红酒 / red wine 1 Tbsp 辣酱油 / Worcestershire sauce 4 Tbsp. 玉米淀粉 / corn starch 4 Tbsp. 水 / water 小胡萝卜 / baby carrots 黄金土豆 golden potatoes 芹菜 celery stalks . <做法> 1. 在碗中混合牛肉调料,之后均匀涂抹在牛肉正反两面 2. 开Instant pot的Saute功能,内胆烧热后加入1 Tbsp左右的橄榄油,煎牛肉两面至焦黄,约2-3分钟,取出牛肉。 3. 在锅内加入无盐黄油,用木铲刮下黏在底部的调料,加入洋葱,炒香好放入随锅附送的蒸架,在架子上放上牛肉。加入蒜,牛肉高汤,红酒和辣酱油。 4. 用锡纸分别包上土豆和胡萝卜,放入锅内,选high pressure做1小时。 5. 1小时候转回Saute功能收汁:把牛肉取出切成大块,加土豆和胡萝卜一起放回锅内。把玉米淀粉和水搅拌均匀后倒入锅内勾芡,约5分钟。 Tips - 喜欢吃辣可以放些paprika更提味 - 牛肉尽量选比较厚的,不容易煮烂。土豆和胡萝卜用锡纸包也是为了防止煮烂。 打卡第3⃣️天
