One is to make it easy to flip, and the other is to make the skin crispy. 4. Slowly pour the flour batter into the mold, preferably to 70% or 80% full, so that the octopus can be added in the next step. You don't need to pour in all the paste. 5. Add octopus and some chives to each mold. 6. Continue to pour the paste until the paste covers the surface, then add a small amount of bread crumbs. 7. When the surface starts to solidify, you can turn it over. It is most convenient for me to use a bamboo skewer and a small spoon together (one in each hand). When flipping, tuck the edges of the ingredients into the bottom of the ball. Wait until the surface is all golden brown. 8. Use a small brush to brush the surface with octopus sauce. (140克) 章鱼 - 1 根小葱 - 章鱼烧酱 - 木鱼花海苔粉 - 面包糠 - 日式美乃滋 <步骤> 1. 用厨房纸擦干冷冻章鱼表面水分,切成小段。如果买来的是生章鱼,需要提前煮熟;如果是熟的,可省略这步。 2. 搅拌鸡蛋,不需要打发,打成蛋液即可。在一个大的搅拌碗中倒入蛋液和水,搅拌均匀。 在碗中分3次慢慢加入面粉,边加边搅拌防止结块。搅拌至糊中没有面粉块,放到一旁静置。(如果出现面粉结块,过筛几次可以让面糊顺滑。) 3. 锅里放入食材前先准备一个小刷子,把每一个模具里面都刷上油。一是为了便于翻转,二是为了让外皮口感酥脆。 4. 在模具中慢慢倒入面粉糊,最好倒到七、八成满,方便下一步加章鱼。不需要倒入全部的糊。 5. 在每一个模具中都加入章鱼,加一些香葱。 6. 继续倒糊,至糊没过表面,再加入少量面包糠。 7. 等到表面开始凝固就可以翻面了,我用竹签和小勺子一起配合是最方便的(一手拿一个)。翻面的时候把边缘的食材也塞到丸子底部。等表面全部金黄就可盛出。 8. 用小刷子在表面刷上章鱼酱。在表面挤上美乃滋。在上面洒上木鱼花和海苔的混合调料就可以享用啦!
