My grandma is from Northeast China, and she makes this every time I go home. The soup base of the sauerkraut hot pot is a stewed pork rib soup with meatballs, pork belly, sauerkraut and lots of tempeh. Although it looks fat, the fat is fried in advance so it is not greasy at all. The sauerkraut also absorbs oil, which complements each other perfectly.
