The point of this dish is to put more oil than normal cooking, otherwise it will not taste good.

First prepare a handful of leeks, be sure to wash them well, this is not easy to wash, and the leaves are prone to dirt, so be careful when washing. After washing, we cut it short (after all, it is a stir-fry, so it is easy to turn over and heat evenly)

Crack an egg, add a little salt, and break it up with chopsticks. So as not to add salt to the eggs when frying (I used to put two eggs, but the eggs absorb oil, too much is too greasy to eat, I recommend one)

This step is a commonplace: put oil in a hot pan, add pepper and ginger to the oil and saute until fragrant. 👆The oil is relatively small, you need to put a little more.

Put in the eggs first and fry them until slightly yellow, so that the eggs are more fragrant.

Then pour in the leeks, stir fry to remove the water, add salt, cumin, chili powder, pepper powder, stir fry evenly, and pour in a small amount of oil, so that the color of the dish will be brighter. Because the leeks are already very fragrant, there is no need to add chopped green onions~~

You can taste it and you can cook it~~

tip: The peppers must be fried, otherwise the peppers will taste a little raw when you eat them.

       To observe the condition of leeks at any time, you must have enough oil! !

【秀羊厨房】烧烤味的韭菜炒鸡蛋 level 2

上次在家里搞了烤肉趴,觉得烤韭菜好好次啊~~~于是买了韭菜就在想怎么炒出烧烤风味的韭菜。我想了想原理都是一样的嘛!热锅=烤架 刷油=倒油 撒辣椒,孜然,盐,花椒粉不就是放进去炒均匀大同小异嘛~~~

于是我就尝试了一下,味道还真不错~推荐给大家。

这个菜的重点就是油要比正常炒菜多放一些,不然吃起来不好吃。

首先准备一把韭菜,一定要洗干净哦,这个不是很好洗,叶子上容易有脏东西,洗的时候仔细一点。洗好后我们切短它(毕竟是炒菜,这样容易翻面受热均匀)

敲一颗鸡蛋,加少许盐,用筷子打散。免得炒到时候鸡蛋不进盐(以前我都是放两颗鸡蛋,但鸡蛋吸油,多了吃起来太油腻,建议一颗)

这一步是老生常谈了:热锅放油,油热放入花椒姜爆香。👆油比较少,需要再放一点。

先放入鸡蛋,炒到微微有点发黄,这样鸡蛋比较香。

然后倒入韭菜,翻炒出水分,放入盐,孜然,辣椒粉,花椒粉,翻炒均匀,淋入少量油,这样炒出来菜色比较亮。因为韭菜已经很香了,就不用再放入葱花啦~~

尝一尝就可以出锅啦~~

tip:辣椒一定要炒熟,不然吃的时候回觉得辣椒有点生的味道。

       要随时观察到韭菜的情况,油一定要够!!
