I tasted the sauce and adjusted it myself. I used 1:1 white vinegar and water. Then I added an appropriate amount of white sugar and stirred until the sugar melted. You can replace the white sugar with stevia, so you don’t have to worry about taking too much sugar (I’m sorry if you have acne-prone skin and love sweets), but this dish is my favorite. It tastes the best I've ever eaten with rock sugar.
I use balsamic vinegar instead of white vinegar for the radish skin, just mix it with water and sugar, no need to put pepper and garlic (it tastes better with mature vinegar, there is no mature vinegar at home). The radish skin is very crispy, and it can be soaked for a long time without being too heavy. When I was a child, my mother soaked it and put it in the refrigerator.
