叉叉这一年做过的美食——日式美食篇2(炸猪排)

上一个大阪烧就是日式美食篇1~   


炸猪排也是一个十分快手的菜呢_(:з))_   


我上学的这个地方只有那种日式快餐店   卖拉面和定食那种   所以吃不到猪排饭😭


还能怎么办   自己做咯




需要的食材:猪里脊块   卷心菜   熟芝麻   炒面酱   鸡蛋   面包糠(一般超市就有卖)   面粉   水果(营养均衡!!!)


炒面酱是右边那个





猪里脊我一般去亚超买那种看着不怎么柴的(颜色比较深偏红而不是偏粉   参考我之前买的大块像梅花肉的猪排)


过程:


卷心菜切细丝   备用


室温猪里脊用刀背松弛   来回拍打   松弛越好肉越不柴


松弛好的猪里脊上面抹一点点盐   裹好面粉   并轻轻拍打抖掉多余的面粉


鸡蛋打散面包糠倒入盘子中备用    锅中放油(多一点因为是炸   可以用小口径锅)   开中火加热


猪排放入打鸡蛋的碗中滚一圈   均匀沾满蛋液后转移入放面包糠的盘中   让猪排均匀沾满面包糠


扔几个面包糠碎进油锅试试温度   如果扔进去就漂浮并且冒泡泡说明温度足够   下猪排


在猪排没有定型前最好不要碰它   不然酥皮会裂开甚至剥落


注意控制火候   如果太大面包糠颜色迅速变深就把火调小一点


觉得炸得差不多了就翻面




一定要多炸一会因为猪肉要吃全熟比较好


两面金黄觉得差不多后就出锅放在厨房纸上静置一下吸吸油


拿小刀把炸猪排切块


下面这个猪排就十分的嫩   而且肉质一点也不柴   还能看到里面的肉汁




熟芝麻碾碎   取小碟倒入炒面酱   撒上芝麻碎


猪排上也来点儿芝麻碎


摆盘   把猪里脊转移进盘中   旁边摆上切好的卷心菜丝   再来一点水果(上面那些都配了牛油果)   然后就可以开吃啦




夹一块猪排   蘸一点酱   一口咬下去   人间美味啊~~~


另外关于卷心菜   第一次吃的时候我觉得生卷心菜特别难吃味道也很大   可是后来某一次我把卷心菜和猪排一起吃了   感觉非常搭   这样猪排也不腻了   卷心菜奇怪的味道也不见了很多   我才get到炸猪排的正确吃法




炸鸡排同理    我用的是boneless chicken thigh


把鸡腿展开就成了鸡腿排啦
