小份盆菜里加了鱼翅、辽参、鲍鱼、角螺、花胶、鲜虾、腐竹、马蹄、烧鸭、蹄筋、凤爪和杏鲍菇,再用鲍汁煨,光是看着配料就鲜的不行。
这盆菜里,有软糯但胶质感黏柔的蹄筋,有炖到酥噗噗的凤爪,软韧的鲍鱼脆弹的角螺,还有附着了盆菜咸鲜又清甜爽脆的马蹄。我向来不爱喝汤,但这个盆菜的煲底我都恨不得带回来水煮蔬菜拌着吃。
