今天懒癌晚期患者终于要为大家分享一篇食谱👉抹茶芝士千层蛋糕🍵

与大家有着一之缘的主角 就是传说中的【低筋面粉】

低筋面粉简称低粉,又叫蛋糕粉,是指水份13.8%,粗蛋白质9.5%以下的面粉,通常用来做蛋糕、饼干、小西饼点心、酥皮类点心等。




配料:

1)饼皮:低粉140g  抹茶粉10g  盐少许  细砂糖30g  鸡蛋4  无盐黄油40g  牛奶460g  

2)内馅a 马斯卡彭芝士360g  细砂糖65g  朗姆酒1大匙  

      内馅b:鲜奶油190g  细砂糖25g  抹茶粉8g  

      内馅c:蜜红豆60g 熟栗子60g 芒果丁60g




步骤:1⃣️马斯卡彭芝士里放入细砂糖(65g)和朗姆酒,用电搅搅打成乳霜

           2⃣️鲜奶油+细砂糖(25g)用电搅低速搅打一分钟

           3⃣️加入抹茶粉(8g)中速搅打7分钟(半固体状)

           4⃣️把打好的抹茶奶油放入芝士乳霜,轻轻翻拌混合(冷藏)(内馅完成)

           5⃣️低粉+抹茶粉(10g)过筛混合

           6⃣️加入白砂糖(30g)和少许盐 

           7⃣️室温鸡蛋四个,手动搅打成蛋液

           8⃣️分几次把蛋液倒入粉状混合物,搅拌均匀

           9⃣️加入融化的黄油,搅拌

           1⃣️0⃣️分次加入温牛奶,过筛,冷藏一小时

           1⃣️1⃣️取出面糊搅一搅,不粘锅中火加热

           1⃣️2⃣️加入面糊,转动锅子,小火加热

           1⃣️3⃣️翻片续煎二三十秒(16-18片)

           1⃣️4⃣️静置放凉,用盘子当模具修剪参差不齐的饼皮

           1⃣️5⃣️放在可旋转的蛋糕座上,抹一层内馅,叠一层饼皮

           🌟记得抹完每层内馅,加入蜜红豆、芒果丁、栗子碎




冷藏三小时 切开尝尝~
