# 开箱大吉 牛转钱坤 #
趁着周末,做一道硬菜冰糖毛豆焖猪脚。亚米购入了南字牌黄冰糖。
早晨起床,先赶紧把猪脚过水。买了一盒前脚,一盒后腿。过完水之后把它剁成小块。一般这种难炖的东西,我都会丢进instant pot里,又快又好。
加水,盐、料酒,生姜、八角、香叶、桂皮等大料,设定高压40min,然后该干嘛干嘛,等它自然冷却降温,两小时后来收货。
把猪脚和大部分汤汁倒进锅里开始红烧,Costco买的冷冻毛豆三袋,煮熟剥好,丢进锅里。高压已经把它压的很烂了,等入味即可关火。
出锅,猪脚软糯,豆香十足,完美。
买前脚还是后脚?
前脚肉质紧致,适合做汤或者卤,后腿肉质偏软,适合红烧。
