Book Abstract

DRIs的主要川途是供营养专业人员对不同人群或个体进行膳食评价和膳食计划，也可以应用于营养政策和标准的制定，以及营养食品研发等领域。
在膳食评价工作中，用DRIs作为一个尺度，来衡量人们实际摄人营养素的量是否适宜；在膳食计划工作中，用DRIs作为适宜的营养状况目标，建议人们如何合理摄取食物来达到这个目标。本手册只对DRIs的不同指标分别适用的膳食评价和计划工作进行简要说明，具体的应用则需要参照《中国居民DRIs（2013版）》介绍的程序和方法并根据具体情况实施。
EAR可用于评价或计划群体的膳食摄人量，或判断个体某营养素摄人量不足的可能性。针对群体，EAR可用于评估群体中摄人不足的发生率；针对个体，可检查其摄人不足的可能性。EAR不是计划个体膳食的目标和推荐量，当用EAR评价个体摄人量时，如某个体的摄人量远高于EAR，则此个体的摄人量有可能是充足的；如某个体的摄人量远低于EAR，则此个体的摄人量很可能为不足。
RNI是个体适宜营养素摄入水平的参考值，是健康个体膳食摄入营养素的目标。
RNI在评价个体营养素摄人量方面的用处有限。如果某个体的平均摄人量达到或超过了RNI，可以认为该个体没有摄人不足的危险。但是当某个体的营养素摄人量低于其RNI吋，并不一定表明该个体未达到适宜营养状态，只是提示有摄人不足的危险。摄人量经常低于RNl可能提示需要进一步用生化试验或临床检查来评价其营养状况。
AI是某个健康人群能够维持良好营养状态的平均营养素摄人量。它是通过对群体而不是个体的观察或实验研究得到的数据。A1与真正的乎均需要量之间的关系不能肯定，只能为营养素摄人量的评价提供一种不精确的参考值。AI的主要用途是作为个体营养素摄人量的目标。当健康个体摄入量达到AI吋，出现营养缺乏的危险性很小。
AI和RNI相似之处是两者都可以作为群体中个体营养素摄人量的目标，可以满足该群体中几乎所有个体的需要。但值得注意的是，AI的准确性远不如RNI，且可能高于RNI，因此，使用AI作为推荐标准时要比使用RNI更加小心。
AMDR指脂肪、蛋白质和碳水化合物理想的摄人量范围，一般常以某种营养素摄入量占摄人总能量的比例来表示。摄人量达到AM—DR的下限可以保证人体对营养素和能量的生理需要，而低于其上限则有利于降低慢性病的发生危险。
