张荩①
夫饮酒之道，岂易言哉！人但知酒中之味，而不知饮酒之味也。戏拈八则，聊作命题。
临风寄调，对月高歌，穷巧搜奇，衔杯雅谑，是曰清酒；
亲朋杂集，雅俗无分，四座喧呼，言多市井，是曰浊酒；
珍馐罗列，灯火辉煌，错落觥筹，笙歌杂沓②，是曰浓酒；
尊残烛冷，僮仆萧然，举盏长谈，不饮不散，是曰淡酒；
肆筵设席，侍从如云，博带峨冠，恭而多作，是曰苦酒；
红袖偎歌，青衣进爵，软玉温手，浅酌低唱，是曰甜酒；
勉强开尊，主多各色，欲留无味，欲去不能，是曰酸酒；
苛政森严，五官并用，惊心注目，草木皆兵③，是曰辣酒。
《彷园酒评》
【注释】
①张荩：清朝人，生卒年不详。曾著有《彷园酒评》三章，曰“酒德”“酒戒”“饮酒入味”，都涉及为主人和为客人之道。
②杂沓：杂乱。
③草木皆兵：形容人在十分惊恐之时，稍微有些风吹草动，就把那些草木当作敌军，便紧张害怕得要命，常用来形容失败者的恐惧心理。据《晋书·苻坚载涵》：苻坚与苻融淝水之战前竖城北望八公山上草森皆类人形，恍然而有惧色。
【赏读】
清人张荩将饮酒分为八味，其中清浊浓淡酸甜苦辣，皆人生必历之境。
世人惯见的是浊酒，最爱的是甜酒，最羡的是浓酒，最不忍的是苦酒，最害怕的是辣酒，最不堪的是酸酒。唯有清酒、淡酒，少有人能真正领略过，但却像极了生之隽永，冷冷的，闲闲散散的，却又余味悠长。
我也是欢喜甜酒的，也爱这春天桃花片片，落到酒里。或许有人会问，这春天的花或许还会落到别处，落到水里土里，在别人的脚前脚后碾成泥。如此一问，也算是不曾懂得桃花了。天下之大，难道桃花就没个去处吗？
我只看到天下桃花片片，从我的眼里落到我的酒里。正如张大复要将佳酿留候梅花，《红楼梦》亦有痴儿女葬花，相较之下，唐伯虎摘取桃花换酒钱就有些俗了。但他们都是懂花的人，也是懂酒的人。花和酒，在这里都寓含着一种生活的态度。
最后想起林黛玉喜散不喜聚，我想她喜欢清酒、淡酒，一定胜过浓酒。
