一、概要：营养是什么
1 生命首先在于营养
营养是生命的物质基础。大约在30亿年前，地球上开始出现了营养物质，随之在地球上出现了生命。生命本身就是一个不断同外界环境进行物质与能量交换的开放体系。生命不停地从外界摄入营养物质与能量，进行同化作用；同时又不断分解释放出能量，进行异化作用。这样的活动一旦终止，生命也结束了。
因此，营养就是人类在生存和繁衍过程中，机体不断地从外界摄取各种食物，经过体内的运输、消化、吸收、利用，排泄过程的新陈代谢，以完成各种生理功能、维持机体健康和促进生长发育的一个连续不断的动态过程。
在营养这一动态过程中，能够维持生命、增进健康和促进生长发育的化学物质称为营养素。营养素分为能量，宏量营养素、微量营养素、其他膳食成分等四大类，其中宏量营养素包括蛋白质、脂肪和碳水化合物，微量营养素包括矿物质和维生素等，其他膳食成分包括膳食纤维、水和其他生物活性物质等。
2 营养是生长发育的“建筑材料”
生长是指细胞的繁殖、增大及细胞间质的增加，表现为全身各部分、各器官和各组织的大小、长短及重量的增加；发育是指身体各系统、各器官和各组织功能的完善。生长主要是量的变化，发育主要是质的变化。
影响生长发育的因素有遗传、营养、疾病、生活习俗、社会环境以及气候因素等，其中营养因素最为重要。例如，构成人体组织的基本单位是细胞，细胞的主要成分是蛋白质，新的组织细胞的构成，细胞的繁殖、增大及细胞间质的增多，都离不开蛋白质。又如碳水化合物、脂肪和钙等营养素，也都是构成组织细胞的重要成分和生长发育的重要物质基础。
