Content Description

Author Description

周浓，重庆三峡学院和大理学院硕士生导师，重庆市生物与食品基础实验教学示范中心副主任。毕业于成都中医药大学药学院中药学专业，之后在大理学院、重庆三峡学院从事中药学研究与教学工作。迄今为止，已主编《实用临床中成药学》《植物学》等教材、专著4部，主持国家自然科学基金委员会、重庆市科学技术委员会、云南省科技厅等科研项目10余项，发表研究论文80余篇，获得云南省高校优秀教材、万州区科学技术进步奖等奖励10余项。

Book Abstract

第一节养生粥的起源和发展
粥在我国有着悠久的历史，是中医药学瑰宝之一。我国人民吃粥，已经历了数千年历史，最早见于《周书》中的“皇帝始烹谷为粥”，《礼记·月令》中也有“仲秋之月，养衰老，授几杖，行糜粥饮食”和“食粥天下之达礼也”的记载。《太公金匮》中还记述了武王伐纣时洛邑雪深丈余，姜太公使人献粥以御寒的故事。
粥字本作“鬻”，很像在龙山文化时期创制的陶器炊具“鬲”中放米烹煮状，这说明我们的祖先早在数千年以前就已经懂得煮粥。一般认为，最早记载药物与谷米煮粥可以治疗疾病的书，是汉代司马迁所著的《史记》。书中记载了西汉名医淳于意“以火齐粥且饮”，为齐王治疗疾病的医案。现知我国最早的医学方书《五十二病方》中记载，服用青粱米粥治蛇伤，用加热的石块煮米粥内服可治肛门瘙痒。东汉名医张仲景所著《伤寒杂病论》中记载了较多米药合用的名方，如“白虎汤”“桃花汤”“竹叶石膏汤”等，在其成分中均有粳米，要待“米熟汤成、去渣”服用，其被后人称为养生粥的先驱。
养生粥在各个时期均有一定发展：
隋代巢元方等所著《诸病源候论》中，有“肠但出不断者，当作大麦粥，取其汁，持洗肠，以水渍内之，当作研米粥饮之，二十余日稍作强糜饮之”的记述。
唐代著名医学家孙思邈所著《千金要方》和《千金翼方》两本书中，列有“食疗”专节，并有民间用谷皮糠粥防治脚气病，羊骨粥温补阳气，防风粥“去四肢风”等养生粥治病的记载。唐代孟诜所著《食疗本草》原本已散失，而近年在甘肃敦煌石窟中发现了该书的残卷，其中记述了茗粥、柿粥、秦艽粥、蜀椒粥等养生粥的食疗方。唐代昝殷所著《食医心鉴》中，收载了养生粥方57首，并详细地介绍了养生粥的组成、用量、煮制方法和功效等。
宋代对养生粥治病养生更为重视，养生粥疗法有了很大发展。由官方组织编撰的《太平惠民和剂局方》记载养生粥方129首，系统总结了宋以前的养生粥方。《圣济总录》则收集了养生粥方113首，如苁蓉羊肾粥治疗虚劳，生姜粥治疗反胃呕吐，补虚正气粥治疗慢性泄泻等。宋代陈直所著《养老奉亲书》收载了适合中老年人延年益寿的养生粥方43首。
元代宫廷饮膳太医忽思慧编著的《饮膳正要》是我国第一部营养学专著，其中也有不少滋补强壮、延年益寿和防治疾病的养生粥方，如“治阳气衰败、五劳七伤”的枸杞羊肾粥，“治虚劳、骨蒸久冷”的山药粥，还有“麻子粥”“马齿苋粥”等。李东垣所著《食物本草》中专门介绍了28首养生粥方，如茯苓粥、麻仁粥、紫苏子粥、竹叶粥等。
明代著名药学家李时珍编著的《本草纲目》中，收录了常食养生粥方62首。《普济方》共收集了养生粥方180首，并对每一首养生粥方进行了全面而详细的论述，这也是明初为止收载养生粥最多的一本方书。由此可见，明代应用养生粥治病养生已经十分普遍。
清朝也有不少有识之士潜心研究养生粥，粥疗法已逐渐趋于成熟。如曹庭栋所著《老老恒言》中专列了《粥谱说》一卷，收载了粥方100首。黄云鹄所著的《粥谱》，收载了养生粥方247首，是记载粥方较多的一本书，其将所有的养生粥分为谷类、蔬菜类、植物药类、花卉药类、动物药类等，并阐述了每一粥方的功能主治，不足之处在于缺少用量、制法，而且全部是单味粥方。章穆所著《饮食辨录》收载了养生粥方44首。尤乘所著《寿世青编》收载了养生粥方46首。
延至近代，较多名老中医利用养生粥治病，并取得较好的疗效。已故名医张锡纯，积数十年之经验，对山药粥的应用真可谓得心应手，灵活多变。他以山药粥为基本方，根据病情，创制了珠玉二宝粥、山药鸡子黄粥等。南京中医药大学邹云翔教授采用荷叶粥降血脂、降血压，名老中医沈仲圭教授应用神仙粥治疗感冒等，都有较好的效果。岳美中教授根据清代陆定圃所著《冷庐医话》中记载的黄芪粥，结合自己的临床经验，重新组方为复方黄芪粥，用以治疗慢性肾炎，收到满意效果。
纵观古今，养生粥在我国医药史上可谓源远流长。随着饮食疗法的普及提高和老年医学、营养学、免疫学等的不断发展，中医药学宝库中这一古老而独特的粥疗法，也将重放光彩，为人类的健康事业更好地服务。
