Author Description

樊新民，教授，男，1953年生，广西桂林人，首都师范大学历史系本科毕业。1979年在中央团校培训班毕业后留校任教，1985年转入中国青年政治学院任教。主要讲授社会学、城乡社会学、当代中国社会问题等课程。主要研究方向：社会分层；社会问题：老年人口。学术著作有《都市裂痕》《生育革命》《文化社会学概要》，编写教材有《当代中国社会问题》，公开发表学术论文四十多篇。

现在这一代老年人经历了20世纪我国改革开放前缺少食用油的时代，而现在又在面临膳食中的油多的现状。对于现在中国城乡大多数老年人来说，饮食中已经不缺食用油了。在日常生活中，营养学家给我们每人每天推荐的食用油用量是25克，有的说是25-50克。总之，我们每天需要的食用油量并不大，现在城市里的老年人担心的不是油用食量不够，而是过多的问题。的确，由于过多的食用油，导致热量过剩，脂肪在皮下和血液中堆积沉着，极大地影响了我们的健康与健美，现代都市人的疾病许多都与此有关。其实这只是问题的一个侧面。对于现代人来说，我们已经认识到了食用油中的成分，以及我们人体需要什么食用油的成分和日需量是多少。对于我们来说，油脂中的必需脂肪酸如亚油酸是不能缺少，亚油酸在黄豆油、花生油、芝麻油中含量比较多。“必需脂肪酸是组织细胞的组成成分，对细胞膜的结构特别重要，缺乏必需脂肪酸可影响细胞膜的功能，如红细胞脆性增加易于溶血，皮肤细胞对水的通透性增加引起湿疹等，还会影响生长发育。必需脂肪酸还与胆固醇代谢有关，如缺乏，胆固醇转运受阻，可能在肝脏沉积。”因此，对于现代人来说，我们不仅是控制油量，还要注意你吃的是什么，油中的亚油酸成分含量多少。我们现在提倡的科学饮食，不仅要把握适度的量，还要重视食用油的品质。植物油中的亚油酸含量比动物油高，尤其以芝麻油中的非常适合人体健康需要，所含的亚油酸与亚麻酸比例比较好，维生素的含量也高，不仅能满足人体对必需脂肪酸的需要，维生素E对抗衰老也很有积极作用。进口的橄榄油、中国的茶油，单不饱和脂肪酸含量高，多不饱和脂肪酸含量少，适合煎炸食物，单不饱和脂肪酸对人体没有什么害处，但亚油酸的含量偏低，不容易满足人体需要。
当然，植物油、多不饱和脂肪酸也不宜过量摄食，“因为多不饱和脂肪酸在体内代谢过程中，其结构中的不饱和双键可发生过氧化反应，产生过氧化脂质，它可能是促进衰老和发生癌症的危险因素之一”。可见，无论什么再好再保健的油，我们都不要过多食用，油不多，影响健康，吃多了也有害处，我们在膳食中应当进入一个“惜油如金”的时代，要“少而精”。
