─君子遠庖廚

說得真好。

庖廚，指的是廚房。君子，則是端正的成年男人之意。身為端正的男人，要盡可能地遠離廚房，意即，可不要成為家庭主夫了。

我們家自結婚以來，便以此為原則，丈夫是不會主動進入廚房的。

「真的有這句諺語嗎？」

有一天，妻子充滿疑惑地詢問。

丈夫挺起了胸膛：

「這可是孟子說的，是他對梁惠王的進言。不信的話，妳看看這個。」

丈夫拿出了祖父的藏書《孟子》，翻到那一頁。

還真的有，上面是這麼記載的：

君子之於禽獸也，見其生，不忍見其死；聞其聲，不忍食其肉。是以君子遠庖廚也。

的確，廚房是殺生之處，雞、鴨都在這裡被宰殺。古代沒有專門處理肉類的職業，就連牛、豬應該也都是在廚房喪命的吧。

妻子聽了孟子的解釋，鼓起了雙頰：

「君子還真是自私鬼。不忍心看到禽獸被殺，但是面對豬排、牛排、烤雞時，倒是都吃個精光。為了讓自己可以吃得更安心美味，才想出這樣的諺語來，還真是好意思。」

「嗯……這麼說也是。」

丈夫也不得不認同這樣的說法了。

古代的人，的確留下了許多金玉良言，但肯定也是說了許多沒有道理的話。只是經過歲月的淘汰，無聊的話語大部份都消失在時間的洪流中。而這句「君子遠庖廚」，對男人來說是相當符合自身利益的話語，因此才流傳下來吧。即便是古老的風俗，也有理應被淘汰卻還是留存下來的事物。

人的體力在嚴寒及酷暑的時候，消耗最大。在夏季土用之日品嚐鰻魚增進體力，實在是相當貼心的一個習俗，不是嗎？將依然酷熱的農曆七月定為居住在地獄的亡者返家探親的月份，也是同樣的道理。古代的人，平日吃的都是令人難以想像的粗茶淡飯，只有在祖先們歸來的這個時期，才能以山珍海味供奉。7月初的1日、中旬的15日，以及祖先們要離去的月底，分為三次端出山珍海味孝敬祖先。當然，最後都是祭祀貧困子孫的五臟廟，也藉此增進了體力，得以對抗嚴厲的盛夏。

嚴寒之時也是如此。在中國，冬至總要品嚐豐盛的料理。台灣、福建會煮紅色、白色的甜湯圓來吃；北方則是吃餃子。冬至大都落在新曆12月22日或23日，稱作「補冬」的料理多以芝麻油、生薑香炒雞肉，或以酒、中藥材「當歸」燉煮（當歸也用來做為生產後進補之食材）。中式年糕的作法

說到春節過年，自然就是要吃年糕。日本與中國的製法，卻是大不相同。日本是將糯米放入石臼中，以杵搗成年糕，這是相當傳統的日式年糕製法。以力量將米粒的形狀一一搗碎，製作時的景象也是迫力十足。

中國則是在石磨中加水磨製後放入布袋中，以重物重壓一整晚，逼出水分，最後再加入砂糖以蒸籠蒸熟品嚐，稱作「甜糕」。也可以直接香烤、或炸成天婦羅，都相當美味。

另外也有以外來米加入香炒的豬肉、香菇、白蘿蔔、蝦米清蒸製成的「蘿蔔糕」。切成薄片後以平底鍋煎烤，沾醬品嚐、或是放入湯中。這些都統稱為過年時吃的「年糕」。

當然，中國會製作年糕的，只有稻作豐富的南方地帶。一般來說長江（揚子江）以北便是以小麥為主食，過年時會製作如山一般高的餃子來品嚐。

此外，推動石磨從旁看來，雖然不若日本搗年糕的動作來得氣勢磅礡，其實也是需要相當的力氣。然而，我家的丈夫卻依然標榜著那句「君子遠庖廚」，擺出一副不甘己事的樣子。每年，妻子在孩子們的協助下奮力地推動著石磨，但一年一年下來，還是漸感吃力。前年（1970年）年底搬家時，不小心將多年來使用的石磨摔壞了。

這不就是天意嗎？

─妳年紀也大了，孩子也到了不再言聽計從的時期，丈夫不是也不幫忙嗎？夠了別再忙了。

丈夫替老天翻譯了意旨，這下妻子再度鼓起了雙頰。別跟我提到年紀。不過力量還是有限，我已經決定不再用石磨了。其實也可以打從一開始就以水和粉揉製麵糰製成年糕。這樣的製法類似韓國的「糕（TOKU）」。如此的改變雖然比較符合自身的體力，不過風味上還是難免有所差異。

至今為止，過年時都會贈送香甜的「甜糕」給周圍的親友，不過因為體力的緣故，去年開始也不再贈禮了。

製作年糕的退休年份已到。

說年糕不良於消化，這只是坊間流傳的俗說罷了。米粒打從一開始就被搗碎，等於是石臼代替了牙齒、胃的工作，怎麼會有不良於消化之說呢。

更何況這可以米飯的精髓所在，不好好表達敬意可是不行的。

往昔，米飯為良藥

到了現在，大家幾乎天天都能吃米飯（不吃的人，莫非是受限於美容上的原因？），往昔的庶民日常多是攝取稗、粟，只有在特別的日子或是生病時，才有機會吃到米飯。

換言之，米飯是良藥。空氣、水，還有米飯，我們對於這些天天受惠的事物，卻總是不經意地看輕它們，實在是相當地不識貨。

像是玄米是治療腳氣病的良藥，這是眾所周知的事例。比起一般的精白米，含有多達四倍以上的維他命B1、B2。

在清朝時代的中國（1644～1911年），當重臣罹病時，皇帝便會惠賜稱作「紅米」的藥。

這種紅米據說源自印尼，是所有紅色外來米的統稱。過去人們也稱之為「胭脂米」，意即如同口紅般的米粒，多麼豔麗的名字啊。

在中國小說《紅樓夢》中，也有女性角色在生產後品嚐「紅色米粥」的記述，是相當貴重的珍品，相信也是類似的食材吧。然而，現在人們已不再吃這紅色稻米了，別說米店，可能要到飼料店才能找到它。就算真的找到了，也是相當便宜的粗食吧。
