（法）杜坎医生，专攻营养学的医生，钻研饮食行为、复健医疗、营养学教育三十余年。现为国际预防治疗肥胖症协会会长。著有《杜坎食谱》、《图解杜坎瘦身法》、《一百种杜坎食品尽情吃》等多本畅销瘦身书。1967年生于台北，中央大学法文系毕业。1990至1997年为利氏学社汉法百科大辞典助理编辑。1999年起定居法国，已有十余本译作。1982年生，辅仁大学法文系毕业。法国里昂二大戏剧学士，法国勃艮地大学文化艺术及教育研究硕士，现为勃艮地大学博士上班学生。

Book Abstract

25年前和那位体重过重的编辑擦出的火花，改变了我钻研的领域。从那一刻起，我专心研究营养学，帮助肥胖症患者或过胖的人减重，并维持正常的体重。
就像其他同业，医学院关于营养学的训练强调节制、均衡及计算卡路里。低卡减肥餐不会限制食物种类，但分量实在太少。
自从我进入肥胖症治疗领域，上面这套冠冕堂皇的理论飞到九霄云外，因为它妄想改变胖子的习性及口欲、要他们成为对卡路里锱铢必较的奴仆。我现在熟知、使用的这个方法，是接触喜爱美食的男男女女、特别是女性，从他们身上学习而发展出来的。
当时我很快就明白，胖子之所以会胖，绝不是偶然。他们贪吃及对饮食的放纵，背后隐藏着借由吃来犒赏自我的需要。这样的需要不仅无法抗拒，而且是由来已久、根植人心的生存之道。
因此，要让一个肥胖者瘦下来不再复胖，光是合理、有科学根据的建议是不够的，下场只有乖乖遵守或完全逃避。
一个想要瘦下来的肥胖者，求助于治疗师或是瘦身法，是要有人陪他面对这场与生存之道背道而驰、犹如自我惩罚的战争。
他要的是外在力量的支持，一个决定者，引领他、给他明确的指令。他最讨厌，也最不知所措的事，就是自己决定哪一天、什么时候、什么该吃、什么不该吃。
胖的人不怕被取笑（也没什么好怕），他们承认自身的软弱，甚至可以说是某种对体重控制的不成熟。我见过各式各样的肥胖者，不管是男是女、来自社会各个阶层的市井小民或VIP，决策经理、银行家，甚至是从政者，高级知识分子，他们坐在我面前，都只能描述自己对食物的巨大软弱，就像贪吃的小孩，虽然不愿意，但无法拒绝诱惑。
很明显地，这些人当中，绝大多数都是从小不知不觉间将食物当做逃避现实的出口；借着吃来减轻压力，忘记不愉快或紧张的情绪。所有逻辑、理性或责任的规条都无法抗拒这由来以久的习性；即便能抵挡一时，他们也很快就举白旗投降。
30年的临床经验，我看过所有在减肥史上成为热门话题、名留青史的瘦身法，让我更加确信我的想法。从20世纪50年代开始，出现210种各式各样的瘦身法。这其中有许多都是靠出版书籍成名，受欢迎，在全世界卖出几百万本畅销书，像阿金饮食法（AtkinsDiet）、斯卡岱尔饮食法（SoarsdaleDiet）、蒙提尼亚克饮食法（Montignac）、慧俪，轻体（WeightWatchers）等。这些饮食法让我见识到肥胖者对这类指令分明的减肥书的爱好程度。连梅约医院（MayoClinic）发展出的饮食法，即使内容严苛、荒唐，甚至危害身体，他们也照单全收。梅约是美国著名的医院，其一周吃二十多颗鸡蛋的饮食法愚蠢荒唐，受到全世界营养专家一致反对，但这个饮食法仍在民间私下流传开来。
分析这些饮食法及它们成功的原因；平常聆听肥胖者的心声；有时候看到患者决心强烈，却因为付出的努力没有即时效果而气馁，我得出下面的结论：想要瘦下来的肥胖者需要立竿见影、一开始就瘦很多的饮食法，这样才能加强、维持他们的动力。他们也需要外力明确的目标指引，并且要有阶段性，才能确知自身的努力是为了达到阶段性目标。
前面提到著名又受欢迎的饮食法，多数具有这种快速达到效果的起始阶段；不幸的是，这些饮食法就写到此为止，接下来的步骤指令都付之阙如，让减轻体重的胖子们又独自面对诱惑，在最脆弱的地方跌倒，一切又回到原点。
这些风靡一时的饮食法，就算是最创新、最引领风潮的，一旦起始速效期达到目标后，就显得贫乏。只留给使用人一堆没完没了的建议，比如饮食适量、均衡，让瘦下来的人无法继续下去。
没有任何一个著名的饮食法在瘦下来之后，还有另一个阶段，对接下来的日子做出明确、简易，有效率的指引，像速效期一样成功地引领使用者。
成功瘦身的肥胖者心里很明白，如果缺乏持续的引导，他们没有能力独自保持战果。他们也知道一旦松懈就会复胖，一开始是慢慢的，接着就是瘦得有多快，胖回来就有多快。
刚刚依循指示瘦下来的人，需要这个象征性的陪伴，或者说是这双牵引的手，让他们感到瘦身过程中有人指引方向。一个简易、偶尔为之，有效的指示，又不能有太多限制，才可能让人一辈子切实遵守。
对大多数流行的饮食法只有漂亮的开端而没有明天的作法，我并不满意，也意识到低卡路里节食法及其他合理建议只是想把饕客变为计算器，令人沮丧而且也没效果；于是我，创造自己的瘦身饮食法--蛋白质交替饮食法，也就是这本书要探讨的主题。
多年来的临床经验让我可以大声宣示，这是目前最有效、也最能令人接受的饮食法。在减重期间蛋白质交替饮食法毫不间断，仿佛是二重奏，也像两段变速引擎，第一阶段速效期的急速减重之后，紧接着蛋白质与蔬菜类均衡交替的饮食法，让身体可以喘息一下，适应体重锐减的情况。
随着时间的累积，看到患者一达到目标，因缺乏后续的准确引导而极易复胖，我便把这个饮食法逐渐扩展为全面性的瘦身法。
这个瘦身法顾及肥胖症患者的特殊心理，并且纳入各项瘦身的成功因素，之前已经提过，在此我再简单整理：杜坎纤食瘦身法提供减重者一系列精确指导，一个可依循的轨道、明确的阶段及目标，不容许任何借口及违逆。
